We bred a gilt a week ago today and tonight she is discharging a milky substance. Why?

I would guess that she is not bred and will probably come back into heat on her next cycle.
She probably has a uterine infection. You can try treating her w/ Penecilin that usually helps clean up any infection.

I think I need to give her the pre-breeding vaccinations first - Farrowsure or Suvacyn? So thos eare given 5 weeks and 2 weeks pre breeding, so I am assuming I can't breed until then....
